Because working in M$ World, but using primary Ubuntu in my private Enviroment, I'm using Thunderbird Portable since many Years with Wine, and mostly no Problems so far until now.
After upgrading my german Ubuntu 18.04.3 x64 LTS System (Notebook) from WINE 4 to 5.0 RC1 by your own native PPA (https://dl.winehq.org/wine-builds/ubuntu/) suddenly Thunderbird Portable crashed immediately after starting!
Uninstalling, purging and Reinstalling of WINE DEV Version didn't help so far! (Keep in mind, everything was smooth with 4.x, until the Upgrade to 5 RC1, continuing with current RC3!)
I tested the Situation with my original old Thunderbird 58.x Portable Version, and also with an fresh from PortableApps downloaded Version 60.9 (https://portableapps.com/apps/internet/thunderbird_portable), and also with an current Version 68.3! (done on an Windows machine, upgraded the downloaded 60.9 to 68.3 without any Problem, since I can't do this in Ubuntu because of the Crash behavior! BTW, It seems the PortableApps Guys haven't upgraded their Thunderbird Version for some time?)
According to your Bug Guide I browsed through the Wine Bug list, but only old stuff appeared for Thunderbird, so here are my Terminal Wine Output, and Thunderbird's builtin Error Report Result. Additionally a screenshot from my Winecfg, not sure if this is helpful for you though.

works fine here. Try a clean (new) WINEPREFIX without any dll overrides/winetricks. Make sure you backup TB profile data prior (if it lives within the prefix).

Fresh clean UB18.04.3 install on an DELL Latitude 7450, complete updating, after then a clean WINE 5-RC3 install according the WINE installation online guide.
Finally downloaded Thunderbird 60.9.1 Portable from PortableApps, extracting and running it with WINE... no problems.
Replacing the default TB Profile folder with my own old 58.x one... BOOM!
Did a second try with an fresh extracted TB 60.9.1 Portable, and updated it to current 68.3.1, no problems. Replacing the Profile folder with my own... BOOM!
Summary: There is something within my own TB 58.x Profile folder which doesn't agree with newer TB version... at least not under WINE. (in Windows no problems so far... neither old TB version, nor after updating)
Well, can't be helped then... I installed the current TB version directly from Mozilla (not the Distro version), exchanged the content of the default created Profile folder with the stuff of my old Profile folder, and after some minor Tweaking it worked flawless so far. We'll see what's happening when I'll do a clean fresh Installation of UB20.04 LTS + WINE 5 next year...

well, technically nothing has been fixed in Wine. You did some manual fixups to the Thunderbird profile data. There are two options here:
(1)
Keep the bug open and try to narrow down the profile settings in question (xml files, sqlite3 database etc.). If the upgrade procedure with an old TB 58.x profile works on Windows after upgrading to 60.x it might be a valid Wine bug.
(2) Don't bother with this further and resolve as 'WORKSFORME' or 'INVALID'.
Resolution 'FIXED' creates a false impression that a bug was fixed in Wine. Even worse, it will appear in official Wine release notes which is certainly not correct.

Do you remember what profile settings did you tweak to make it work? Maybe it's possible to reproduce with a small default profile from 58.x without much profile data/emails/specific mail settings. Also which was the last Wine 4.x version this worked (exact version)?

what I actually tried to explain, my own TB 58.x profile worked OOTB with the mozilla downloaded TB 68.3.1. only thing I'd to do was deleting "pkcs11.txt" (and "key3.db" & "key4.db" too just to be on the save side) from the profile's root-folder, as TB wouldn't/couldn't use the stored account passwords anymore. after then ofc I'd to retype all needed account PW's once, but since then TB is running smoothly in my UB18.04.3 enviroment.
TBH, I'm way to lazy to dig deeper into the situation, so WORKSFORME is good enough right now. will give it a try again when WINE 5 final comes out, but no sweat.
