WineHQ 1.9.2 doesn't recognize the Linux ALSA audio system under Ubuntu Studio 15.10.
There is no such option into the Winecfg app, and non of the Windows software can use it.

With both OS, the only one audio device WineHQ 1.9.3 can recognize is Pulse Audio. There is no any other chance.
And, if we can use any Windows audio apps., we have to use Pulse Audio only in Stereo (if we set "winecfg" to surround audio, the audio apps will be frozen, they won't work).

--- Comment #3 from Andrew Eikum aeikum@codeweavers.com --- If you are using PulseAudio, then Wine by design reports that there is only one device, the PulseAudio sound server. If you want to direct your application's audio to another device, you should use a PulseAudio mixer (e.g. pavucontrol) to do that.
