   I tried it but got no output in the file:

mark@lightning ~/SAVITEST $ WINEDEBUG=wave,dscapure,mixer wine Crystal.exe 2>&1
| tee Crystal.out
mark@lightning ~/SAVITEST $ cat Crystal.out
mark@lightning ~/SAVITEST $

Possibly Wine needs to be compiled with debug features?
