It would be nice if you could add some more informations like the distribution, graphics card/driver, app version.
Please do not use playonlinux to report bugs, it is not supported here. If you have a problem with that report it there!

I got the Retail Version. didnt tried a patch, so its "1.0"

I also have the retail version of the game, I tried it with -patching (v. 1.0,v. 1,2,v. 2.1 ) -using wine versions 1.1.20-1.1.24 (After not starting with my wine (v1.1.24) i made a link with playonlinux to the UT3 installation made with wine for trying different wine versions, I didnt change anything else in POL but the wine version, if thats not okay as a test result for running with that wine versions ignore it - i dont have the time to realy install and try it out with all this wine versions)
And whats so bad obout starting a game with that .desktop file? I looked out and for the terminal log it doesnt make any difference if you start it that way or in the folder with ./gamename.exe!

It's not valid shell script. You can not run it that way. It's a desktop shortcut and totally meaningless to the shell. You can only "double-click" on it. Also see this for proper way of running program from the terminal: http://wiki.winehq.org/FAQ#run_from_terminal
What video driver version? Try running in virtual desktop mode. Also post output of 'xrandr' command.
