It appears CentOS 5.1 + Gnome isn't able to display the vgasys.fon and sserife.fon that comes with wine. Replacing these fonts with ones from Windows2000 solves the problem. Alternatively, simply copying the coure.fon supplied with wine to vgasys.fon & sserife.fon will work too.
I suppose this begs the question why CentOS won't render these fonts while other flavors of Linux apparently do.
Tests are as follows:
"wine notepad.exe" will type with blank characters and Office 97 install splash screen will have no text if using the vgasys.fon included with wine 0.9.52-1.
Office 97 install dialogs & pushbuttons past the splash screen will have no text if using the sserife.fon included with wine 0.9.52-1.
