When I try to run "Stardew Valley" i get the following error: "4672.801:0009:warn:xaudio2:IXAudio2Impl_CreateSourceVoice OpenAL can't use this format and no FFmpeg, so giving up"
As described by Andrew Eikum in this comment 35 of Bug 39402 (https://bugs.winehq.org/show_bug.cgi?id=39402#c35), this might be because of missing ffmpeg support in the wine build used.

That package is old; it predates the switch to the OBS. The OBS Debian Testing builds are definitely built with libavcodec-dev as a build dependency, so please retest in 4.0-rc5.
Note that the Fedora staging packages are not and cannot be built with libavcodec support because Fedora does not provide it.

You are right (at least with the first part), I looked in the wrong folder. I'm sorry for that.
But I know now what the problem is, "apt upgrade" is keeping the new wine-staging packages back.
I will report back, when I'm able to install the new version.
Regarding the new repository key: I had already added the new key, but only because I somehow looked at the Wiki Page and noticed the head message about the key change.
But I didn't see any message in the package-"NEWS".
