1. Mageia Linux 5 ships with wine-1.7.30 - is this recent enough for testing?
2. If it isn't recent enough, I'll need to build wine on a VM. Should I build wine-32bit on an i586 VM, wine-64bit on an x86-64 VM, or wine-32bit on an x86-64 VM (which from what I understood is complicated to do)?
3. How do I install MS Office 2010? Can I get a legal free version from somewhere or do I need to purchase a licence? Purchasing a licence will likely be costly and is not acceptable.

Any version after that is fine.
The thread on FXP forum shows that the version used is 1.7.8 so your version is fine.
2. Not sure it has anything to do with the architecture, purely visual, any architecture will do.

This 60 days trial does put a damper on our relationship. Sorry, but I'd rather not risk such a trial to expire 60 days from now, so I won't be able to use it again for something more critical.

But then the licence will expire and I won't be able to use it again - on any VM or on a live hardware. So it's not a good solution - sorry.
