The last stable release 1.6 is about two years old, and there have been a lot of changes and improvements in the meantime. Tests results with such an old version are just too unreliable to be useful, so yes, please upgrade to a more recent version and retest.
The discussion here on the bugtracker should only focus on the technical aspects though, so for all questions regarding updating Wine, please ask in the WineHQ forums. In order to get a more recent version you can either use prebuilt packages (for example https://forum.winehq.org/viewtopic.php?f=8&t=25767 ) or compile it yourself (https://www.winehq.org/docs/wineusr-guide/installing-wine-source).

Which version of PDF-XChange Viewer did you test? 2.5.315.0 is the newest that the reporter could have used originally.

Hmm, but the bug attachment says the program crashes some time after running, not that it fails to open or crashes on start.
To test per the original report ("after some time"), can you try opening different PDFs and scrolling through, navigating back and forth and so?
Just looking quickly, I see two crashes with 2.5.315.0 and wine-5.1, one looks unrelated and another sure if could is related to the original (might differ because I'm on MacOS).
I opened this PDF using the open from URL option: https://www.adobe.com/content/dam/acom/en/devnet/actionscript/articles/PLRM....
While navigating after scrolling a few hundred pages, I get:

No crash. Did scrolling, navigating back and forth, go to precised page, CTRF+F, CTRL+SHIFT+F, sign, zoom, rotate. Everything is fine for me.
