If this is the same behavior as Windows, then this bug is invalid. Otherwise, the issue is that in wine configuration -> desktop integration -> appearance, with the default wine theme, gray text seems to be using the "shadow" color instead of the "gray text" color. I ran into this issue when trying to make wine apps look like mist; setting the shadow color to the control background color so that there's only one pixel of shadow (the dark shadow color) makes all grayed text blend into the background.
To reproduce: set "shadow" to a funky color, and see the grayed text on the same window change colors. Change "gray text" and watch nothing change...
Related, "window background" seems to change the background of active controls like text boxes, whereas "control background" changes the main window background. This, however, has a higher chance of being a proper simulation of windows.
