After running Vaz Modular Demo, trying to exit either through 'File->Exit', or
by clicking top-right X, an access violation is raised, and the application
does not exit.

Confirming. Terminal output is pretty small, doesn't offer too many hints:

This sound card's driver does not support direct access
The (slower) DirectSound HEL mode will be used instead.

In wine 1.1.17 installation went ok.
Running it and pressing exit caused a popup :
Access violation at address 00000000 in module 'VaxModDemo.exe'. Read address
00000000.

In log :

No access violation error appears on exit with Wine-1.3.13 (tried with the demo
in comment #5).
It was fixed somewhere between 1.3.9 and 1.3.10.
