Windows are black in 16-bit color mode when I use the mac driver. Try launching, for example, Wine's registry editor in this color mode.

Or are you configuring something in Wine? Again, how? Please be specific.

I've used SwitchResX to change the system's color depth, you can also try out Display Maestro (the trials are available on their sites).
