We should make the effort. Just saying "That's not how Bugzilla works" is not an option; several large Bugzilla installations have shown that Bugzilla can indeed hide email addresses better than we currently do.

If you want to remove your email from the system, I think all you have to do is change it in your preferences.
Otherwise, yes I agree with Dan, something should be done.
So, here's my proposed patch which does not show email addresses to users unless logged in, for pages like this (reporter, assigned to and CC) and search results.

If you're not logged in, then don't show any email addresses, only names. The CC field is hidden.
Once you login, you see email addresses next to the name, as well as the CC list.

I think this bug is critical.
If you decide it is a low priority it is an other question but you can't tell that this bug is just major : 168 spams requires me about half an hour in order to process them from my junk folder in order to report them to spamcomplaint, spamcop.net, signal-spam.fr, etc.
My time isn't free. I'm harmed by this bug.

For many users, spam prevent them to user their computer for many minutes per days because they have to process and report Spam.
In my case I spend about half an hour per day in order to properly process my spam. Thus I can't use my computer during half an hour per day.
