Although the game is part of the Wine Gold list, it fails to start with a traceback (see attached file) that shows an attempt to switch the display's resolution to a refresh rate of several megahertz (which of course no graphics hardware is capable of).
The screen switches resolutions to 800x600, shows a "Loading..." text on a grey background and just hangs until I kill it (which is where the traceback ends).
I'm using an official Wine 1.1.12 release (from http://winehq.org/download/deb), but the problem was present in 1.1.11 as well.
I'm running Ubuntu 8.10 Intrepid (64-bit). My graphics card is a GeForce 8400M GS running into the builtin LCD of my Dell XPS M1330 laptop. The problem occurs with both versions 173 and 177 of the nVidia drivers.
The tested version of the game is the retail CD version (both with and without nocd cracks), patched to 1.2 then to the community patch at http://www.planetvampire.com/bloodlines/files/patches/
As discussed at http://appdb.winehq.org/objectManager.php?sClass=version&iId=4949 , at least one other user (running ArchLinux with an nVidia FX 5200) has the same problem.

Enabling the virtual desktop doesn't, indeed, change much. The error features the same insane refresh rate, with (desktop) instead of (XRandR).

And when i use a nocd crack i still get a impossible frequence and it does still work.
I will add my xrandr outputs, and console outputs with and without nocd patch. Maybe it is working for me, as i seem to have much more modes in xrandr.
But i can run the game with debug channels on for comparison if someone can give me which channels i should run.

Note that without a nocd crack and no disc in the drive, the game doesn't even bother trying to initialize its 3D engine -- a plain dialog with "Please insert disc 1" is all it ever does.

I just tried using a different nocd crack (I'm not sure whether posting links to nocds is all right, so I'll just say it's the one entitled "Vampire - Bloodlines v1.2 [ENGLISH/GERMAN] No-CD/Fixed EXE" you can download from GCW) and the game did launch!
That's... Interesting, to say the least. IIRC Bloodlines uses SafeDisc copy protection.
