Guitar Hero 3 fails to start, attached is the console output of it trying to start with the latest Git.
I've also tried patching the game to version 1.1, which has the same crash.
There is no demo of this game as far as I know.

I ran with warn+all which showed up this error:
warn:file:CreateFileW Unable to create file L"\\.\z:" (status c0000022)
Removing Z: from dosdevices finally made the "GH3 DVD not found" error come up. I then mounted the DVD which finally made a much better attempt at loading, before crashing again.

It is however possible that I saved that log after breaking it, so I'll check when I'm back at my PC.

Output with today's git, after remove the z: as per above, and setting a label in winecfg for c: after seeing:
warn:file:wine_nt_to_unix_file_name L".windows-label" not found in /home/bratch/.wine/dosdevices/c:
And again several others relating to the lack of label.
It still doesn't start at this point.
