I start steam client, start game "Portal 2" and after load game I hear the voice but see only black screen. When I press the "escape" button I can see the menu of game. I have Fedora 16 with last updates.

This is with a Radeon HD 6950 and fglrx drivers installed under ubuntu, up to date as of the time of writing. For what it's worth, the output of fglrxinfo:
$ fglrxinfo display: :0.0 screen: 0 OpenGL vendor string: Advanced Micro Devices, Inc. OpenGL renderer string: AMD Radeon HD 6900 Series OpenGL version string: 4.2.11903 Compatibility Profile Context
$ wine --version wine-1.5.21
Running with a "virtual desktop" (configured to fill the entire screen) makes no difference.

I can't reproduce this with NVIDIA graphics. Your graphics driver might be broken or below spec.
Please retest with recent Wine version, preferably Wine 1.7.18
