Hi,
(The problem has been mentionned to the AppDB already, for example: http://appdb.winehq.org/objectManager.php?sClass=version&iId=7119&iT... But I couldn't find any associated bugreport, so here it is.)
Some "canyon" levels are not correctly illuminated and are rendered all black (actually everything but the sky). I can at least confirm the first one personally, having not tried to download a savegame from the Internet to go past the first problematic level.

Some of the canyon levels are missing textures, everything is black, only the sky can be seen. In another canyon level everything is filled with solid grey 'fog'. The same problem in Wine-1.0.1 with a minor difference: certain objects are visible (ambulance car, medipack), otherwise the same black textures are present.

The demo contains only 2 levels, none of them show the reported problem on my system. The bug is still present in the full game, using Wine 1.5.6, Nvidia card with the proprietary driver 295.53.

Still present here, Wine 1.5.10, Nvidia proprietary drivers 304.32 The Canyon levels are rendered without textures, the rest of the game rendered correctly.
The open source Nouveau driver renders the whole game (including the menus) incorrectly: missing textures in each level as well as in the menus, all text is rendered as blocks etc.

Problem still exists with Wine 1.5.23.
By the way, since it doesn't seem to have been mentioned and I'm not sure whether it matters, I think the scene (or maybe just the ambulance and the medikit, like in old Wine versions) show up for a split second just after level initialization (when display is still divided in comic panels), then everything but the sky turn black.

I suspect it could be the result of fixing bug #14716 in 1.1.3. I'm no OpenGL programmer so I could be totally wrong, but the bug was that objects were the only ones not obscured by fog; - The fix made objects affected by fog just like the landscape below them; - In our present case, it could have made "objects" look like the landscape,... that is, totally black! With the hypothesis that it's not a problem of textures, but of some fog or volumetric effect that literally obscures everything.
I'm not sure it's supposed to be some volumetric effect in this map; Looking at the expected screenshot we see the dust clouds of the police cars on the road above, but nothing else really obvious. But maybe there's a slight dimness effect, that for some reason is interpreted as a full strength pitch black effect when nVidia drivers are used?
Could anybody suggest some way to (in)validate that hypothesis (logging, workaround,...)?
