From your log:
err:wgl:opengl_error No OpenGL support compiled in. err:d3d:InitAdapters Failed to get a gl context for default adapter Direct3D9 is not available without OpenGL.
Does anything change if you build Wine with OpenGL support?

Direct3D9 is not available without OpenGL.
Please fix your system first (missing 32-bit OpenGL libraries (part of the driver).

Confirming, using wine 1.2
I lie. on re-running Itunes I can actually click on stuff, however nothing actually plays. it says its playing but no sound.
I should note that when i ran Itunes the first Couple times it was exactly like op reported. Gives waring about not being installed properly, opens and then freezes up. I minimized it to tray but then could not maximize again so I went to terminate the process using the"system monitor" however while Itunes was running i had lost the ability to click on native Linux programs such as system monitor. i had to terminate the process using the keyboard. NOT the mouse. the cursor would move and i could start applications from awn window navigator but i could not click on anything else until Itunes was terminated via keyboard.

Compiled newest dev wine from source (1.3.1), performed iTunes 9.1.1.12 install with defaults accepted except:
+ Unclicked "Use iTunes as the default player for audio files" + Unclicked "Automatically update iTunes and other Apple software" +"AutoRun is turned off. iTunes won't be able to recognize when a CD is inserted or ejected until your computer's AutoRun setting is turned on. Do you want iTunes to turn on AutoRun for you?" No
Upon seemingly successful install, ran for first time:
+ Unclicked "Add MP3 and AAC files" + Choose "Yes, keep my iTunes Media Folder organized"
and GUI is unresponsive. Nothing I click on it responds.

Sha1sum matches with Austin's (comment 22).
I was unable to get this installed corectly with pure wine 2.0.rc3.
So I installed it wine-staging and tried to run with wine and it does run but the interface is non-responsive. Another run with wine-staging and it works. The only issue I noticed with staging was that some of the icons sometimes vanish.
So it installs and runs with wine-staging 2.0.rc3. And the installer might have regressed with pure wine.
