I find I can not set application run by wine 's menu font except change the
Registry cfg.
I hope wine team will give a easy way to change the application menu font.

You can already do that with winecfg -> Desktop Integration.

I use winecfg ->  Desktop Integration to set all font to Zfull gb( a bitmap
font)
but I find the applications run by wine do not use the font I set (Zfull gb)

That could depend on application, or actual text. You can try to run 'wine
notepad' after making this change to verify. Also make sure similar change on
Windows makes a difference you expect for application you want to run.

Does wine support application use bitmap font?
I use 'wine notepad' then set notepad font to Zfull gb(a bitmap font)，but this
editor font display like a vector font.

It seems application run by wine do not render bitmap font correctly, 
qt has a bug render bitmap font: if I turn on anti aliasing the bitmap font
will render like a vector font.
anti aliasing should not affect bitmap font, I do not know if wine has the same
problem.

I use ubuntu18.04, I find out if I use gnome-tweak set font->Antialiasing to
Standard(grayscale) or None, the notepad run by wine will display bitmap font
correctly
but some softwares run by wine still have problems, the number and letter has
flaw.
I attach a png file, show the bitmap font display effect run by wine3.0 for
kindle1.11.

It's not a bitmap font, it's regular vector font with embedded bitmaps for some
sizes. We had improvements in regards of fontconfig/freetype integration,
please retest with latest Wine 4.5.

bitmap font display effect in kindle use wine4.0

You can see the bitmap font display effect for digit and letter is much better
now.
But the Chinese Character still a little vague.
