On Windows, during initial user training,
the words you speak are quickly (with maybe one word lag)
highlighted as such.  
On Linux, they are not highlighted until you 
stop speaking briefly.

It looks like there is some critical section being entered in wine that
prevents graphics from updating until voice recognition is done with
processing. I'll take a closer look.

This problem improved so much about a week ago that you may want to close it
out. The recognition is now word-by-word, just as in Windows, with no (or very
little) lag.
