I'm getting grey textures for some, but not all, objects in Super Meat Boy. The walls and player render fine, but the squirrels and spinning blades in the first few levels show up as moving grey squares.
Nvidia driver version 260.19.06 on Ubuntu 10.10 64-bit, with a GeForce GTS 450

Some textures render as black rectangles, other don't render at all (making the game impossible to complete). I don't know if this is helpful but while running the game, my terminal gets spammed with this message: "fixme:d3d:resource_check_usage Unhandled usage flags 0x8."

Wine is currently 1.8(stable) and 1.9 series(development). Could you update and retry? And another thing that you supposed to attach here the whole console output while trying to play the game. The output given here is really limited.

If strict draw order fixes the issue I think it's quite safe to assume that CSMT does too. Could you try more recent wine with CSMT enabled?
