An obvious exception could be the keynote. Beyond that, my opinion is that irc chat logs, or emailed summaries are more useful.
I'm attending the Wine conference this year and intend on keeping notes. I'll look at writing them up after the conference.
Perhaps the wiki is a better place to do the writeup, that way people can add their own notes and add to what is there.
