Well, you could always use mirc via this fine piece of software called
Wine, that can do logging :D Last time I checked mIRC worked perfectly
too (though i didn't use it for long).

Or you could use a real IRC client, like irssi (/autolog). This does of
course assume you are present for the entire meeting. Setting up a bot
is probably too much effort though.
