Did you forget to add the key?

wget https://dl.winehq.org/wine-builds/Release.key
sudo apt-key add Release.key
-----

The file contains the key you are missing:

$ gpg --list-packets Release.key | grep keyid
keyid: 818A435C5FCBF54A

Fixed. I just forgot to add it.
