I had a similar issue on my freshly compiled Wine on my Mac, maybe there is a recent regression. It seems to freeze during the Wine Gecko or Wine Mono installation. Try to use WINEDLLOVERRIDES="mshtml,mscoree=" in addition to what you already have.
