Trying to run this program under Wine, I get the following results. The initial screen appears asking for the name of the MIDI file, but when I try to enter any text I get a crash. A listing of the output follows.

Why don't you look at timidity & lame? timidity (MIDI->WAVE) and lame (WAVE->MP3).

this needs to be implemented (and isn't as it reads). the rest of the MCI errors come from this

this is another error to be fixed (X11 related)
so two bugs (or unimplemented features in wine code), nothing wrong with your setup
