Wine is not looking for the paths anywhere. Try adding /usr/lib32 to your
/etc/ld.so.conf run ldconfig as root and try to configure again

I've run the ./configure as follows: "./configure --with-x --without-curses
--x-libraries=/usr/lib32 --x-includes=/usr/include", and WINE fails to build,
giving me the following:

Yeah it looks like I didn't wait long enoug. As soon as I hit "Commit" button it
showed me that dialog.

I have installed it and it starts without any errors. (I think it starts - there
are no windows, no messages and nothing happens at all). Could you try and
rename ~/.wine dir and try installing this again?

Ubuntu Breezy would do it and now I'm trying out Dapper and it does it again.
But yeah, I'm not sure if it would be a gnome thing or Xorg or something. :-\
