I installed winehq-stable over winehq-staing. The install removed the winehq-package but did not remove wine-staging wine-staging-amd64 wine-staging-i386:i386

The winehq-* packages are just symlinks that allow that version to be the system default. If you haven't removed the staging packages, they should still work by using the full path to that wine binary.
